Summer means stone fruit, and Peach Galette is a perfect Christmas dessert that is easy enough to get the children involved in making it.
You could easily make this galette with plums, berries or apples.
Ingredients
1 sheet shortcrust pastry, thawed, or your own shortcrust pastry
3-4 ripe peaches, sliced
2 tablespoons brown sugar (or honey from Bees R Us Braidwood)
1 tbspn plain flour or cornflour
½ tspn cinnamon (optional)
1 beaten egg (for brushing)
A little extra sugar for sprinkling (demerara or raw)
Directions
Preheat oven to 180C.
Using a floured rolling pin, lightly roll pastry out to make a larger piece. Trim edges to make a rough circle.
Place all filling ingredients in a bowl and stir to coat fruit.
Arrange peaches around the centre of the pastry, leaving a 3cm border.
Fold edges of pastry in, to form an open top pie.
Brush edges with the egg wash and sprinkle with extra sugar
.
Bake for 30-35 minutes, or until the edges are golden and fruit is bubbling.
Serve with a scoop or two of vanilla gelato from The Pines Kiama or your favourite ice cream.
